dear nheiges I dit mean Bruyère (the root wood of Erica arborea), Gruyère is a french mold cheese, your cheese is an Emmentaler from Switzerland. The only one interesting of Emmentaler (it tastes like paper) is where come the holes from.The holes come from very tiny hay particles in which microorganisms are housing which produce gaseous carbon dioxide and that in turn blows the holes into the cheese :-)

Yeah, I knew it wasn't the right cheese, but it was the only cheese, so I hoped my little joke attempt would come across anyway :-) interesting about the holes - I never knew that!
